Fried noodle or boiled?

boiled, I prefer to use a thinner noodle for making pan-fried noodles. My specalty dish, though it only became so because the memorable name causes people to keep asking for it, is Ants Climbing a Tree *note, I did not name this dish*, which is just bean thread noodles cooked in beef broth with a slightly spicy ground pork and green onion mixture. That and Dim Sum, I make really good Zuchinni Shu Mai.
My other specialty dish is what I call the 'ultimate nacho ramen sandwich' which uses the unique texture of ramen noodles, with refried beans and cheese on a hogie roll, it tastes much like a bean and cheese burrito, but with noodles instead of rice and bread instead of tortilla.
