I'd like to have a less mainstream answer, but the one at the top of my list is probably still the fight with Magus in Chrono Trigger.

Actually, I forgot how much I liked JENOVA Absolute. I never got to hear the song the whole way through while actually playing it, so it tends to slip my mind.

I love Smithy's theme and... really anything related to the Smithy musics, the "Towns in Turmoil" music was perfectly composed, it has a very malicious yet playful sound to it.
