Is it practical/possible to change the monster's skillsets to a default layout (like Byblos) so that they can be more versatile? The only way I can see is to create new skillsets to replace the old. Another idea is to change their Attack Menu from Monster to <<default>> but would that even work?

Definitely. You basically can make any monster you want with up to 16 skills. You can use the empty job slots to make custom units with monster sprites. The catch when using this method is that they custom monsters don't work right in your party so they are really only for non-invitable enemies.

For normal, invitable monsters I think you can just give them a normal unused skill set and it will automatically know the first 4 skills only. But I'm not sure and it may not function correctly.

sure. i've never had any problem doing this when i've tried. maybe try in the ENTD editor making it so that when that unit joins (that specific ENTD), check their gender as monster, and male or female.

another question i need to know, seeing as how i don't have the time to check it out now, is this: if i give a human gender to a unit with a monster sprite, is it possible for that unit to equip armor/accessories like a human?

Thanks guys!

So switching their skillsets wont work for normal invitable monsters? I hear they wont breed unless they have a monster type skillset.
