When trying to replace sprites in the game i managed to load up The male paladin sprite when its on the battle field but it still showing the default (Knight) sprite in the job change menu and in the Battle layout screen. How does one go about switching these?

EDIT
After expirementing a couple more hours of headaches and glitches

Those are just called the Formation sprites. They're one-off sprites that don't draw directly from the main spritesheets for who knows what reason (though it's used for some nice Formation poses in Jot5).

I think you can now edit them with Shishi? If not, the tutorial link index should point you in the right direction.

I'm pretty sure that changing formation sprites/portraits involves editing UNIT.BIN, WLDFACE.BIN, and WLDFACE4.BIN which are located in the "EVENT" folder inside fftpack.bin... Well at least that's how I remember doing it.

There should probably be a tutorial for using FFTEVGRP and CDmage/UMDGen posted somewhere.
Note: UMDGen is used for modifying the PSP version.
