If you replace the chocobo sprite with the dragon sprite

will I be able to make my characters ride dragons?!?

I swapped job 46 (Undead oracle) with a chocobo sprite, and used the ASM that allows you to ride job 46
So I think it's possible

Anyway, there's a hack that allows you to ride every monster

The dragon sprite would have to be remade a bit, or the sprite riding it will appear behind the entire dragon rather than appear to be riding it.

Don't change the sprites. There is a hack you can do to make different units ridable, as Dome mentioned.
