You nubling.  It's time you realized that Steel Giants are just monsters wearing bulky power suits.  Obviously the suit explodes when self-destructing, exposing the fleshy innards.  Like pigeons, however, Ivalician monsters contain magnets in their brainpans, which are then used to reassemble the obliterated power suit from nearby scrap metal.  

Faith magic does not work on them because it can't get in through the suit to affect its wearer.  Spells merely splash across the surface of the armor.  Impact from weapon blows are still felt through the suit, though they are significantly reduced in damage, reproducing an effect similar to having innate Defense Up.

The suit is powered with intricate wiring and an assortment of ancient batteries and power cells, allowing for crushing, hydraulic-bolstered attacks.  These circuits are easily overloaded, however, and the high conductivity of the materials used result in a more exaggerated electric shock when the frame is struck by real (read: non-magical) bolts of electricity, such as that delivered by Tiamats.

Especially involved attacks such as Dispose and Crush involve complex internal operations that were not originally designed with the presence of a pilot in mind.  As such, a Steel Giant's own chest cannons and drill arms often result in some amount of injury inflicted upon the pilot, as wings and tails and ears and tentacles and things get caught up in the machinery.  When Steel Giant pilots are ordered to perform such actions on the battlefield, PETA usually does not approve.

It was PETA's campaign of terror in revenge of the mass genocide of moogles, nu mou, bangaas, etc., that ultimately led to Murond sinking into the sea and technology such as the Steel Giants effectively being wiped from all memory.  PETA eventually renamed itself Bart Company, and came to be opposed by the hamburger-chewin', raccoonskin cap-wearin' Mustadio, who reinitiated the campaign of violence against Ivalice's native varieties of monsters by introducing the gun to the battlefield, which allowed hunters an unfair advantage over their game when helicopters started to come into general usage.
