If I want to get rid of Mime, dragoon, Ninja, and chemist, could I just set the job requirements to all zero?

Possibly.

If that doesn't work you can make them cyclic (ie, all need mime levels, and mime needs dragoon levels) which should also do the trick.

thats how i get rid of my mimes and calculators

require lvl8 in everything (this also is great for making generic human enemies have a lot more skills learned as u can set their highest job unlocked to mime
