How can I edit it?

Extract the file with CD Mage or Magic ISO and then use a hex editor.

Ramza's stats are 0x4F124-8.  His stat variances are from 0x4F146-A
Ramza's equips are 0x4F129-E.

You can change those values in the Hex Editor.
