how do you get certain maps?

I was bored and watched like 3 min of the AI tourney on the site and I noticed that there were some maps that weren't even playable in vanilla FFT such as the dining hall. How do you set up a battle in a map of your choice like what they did in the tourney?? For example, lets say i wanted to fight in the orbonne monastary where ovelia was praying or even outside the church like in the beginning.
