Use of ePSXe before 2.0 is highly discouraged. Mednafen, RetroArch, and Duckstation are recommended for playing/testing, pSX is recommended for debugging.

Is there a changelog for Parted Ways anywhere?

Not yet, and there probably won't be for a while. I'm still awaiting a large amount of ASMs to be finished so as you see things in the demo they'll probably be heavily changed in the final version.
