For Emerald?  Go into the fight with Underwater Materia and as few other materia as possible.  Efficiency is the most important part of fighting Emerald Weapon because Aire Tam Storm or whatever it's called is based on the amount of materia the character has equipped.

To beat the emerald weapon
His final attack deals 1111 damage X number of materia equipped
So, equip less than 9 materia and you will do fine

I haven't beat  II, III, IV, V, VI. This is all assuming FFT doesn't count.

1) XII (I love this game to death even without a story or character development)

5) IX (this would actually close to my least favorite of the entire series)

Hard for me to choose one favorite, but here're my top five in no particular order:

1) IV
2) V
3) VII
4) IX - Just replayed it recently and I appreciate it much more this time around. It has the worst implementation of ATB though.
5) XII - It's a shame SE hasn't fleshed out the Ivalice Alliance more than the have though.

As for the rest, FFII is probably the only one I don't much for at all, mostly because of the character progression in the game. I still haven't ended VI yet and I've never played the first game, so I can't speak on it.

Cool topic, I'm never satisfied with my order but here it is:
1. FFIV
2. FFI (for nostalgia's sake; it's one of the first games I ever played)
3. FFVI
4. FFIX
5. FFV (vastly underrated, in my opinion)

I haven't played any of the games that came out after FFIX and I didn't really get far enough in FFII, III, VII, or VIII to rate 'em.
